Food Groups Vitamins

To all vegetarians out there. What is your normal daily meal regiment like? What kinds of things do you eat?
How are you able to get all of your essential minerals and vitamins to fullfill your 5 basic food groups?
I get most of my protein and iron from beans and nuts. I eat a lot of beans, green vegetables, corn, potatoes, tomatoes. When I have grains I try to make them whole grains. I like berries, bananas, pineapple, raisins, grapes. I am lactose intolerant, but I can eat cheese in moderation and so I usually have a little of that. I drink a lot of water and herbal tea, as well as sugar free drink mixes. For more elaborate meals I might make cheese lasagna, meatless chili (it has lots of beans in it), spaghetti with homemade marinara sauce (big chunks of tomatoes), stir fry with tofu or tempeh. If I have a sandwich, it'll probably be veggies (lettuce, onion, banana peppers, etc.), or peanut butter and jelly, or cheese. I cook with olive oil, and I take supplemental flaxseed oil because flax can provide many of the benefits of fish oils. I never liked seafood, so this is something I did before becoming vegetarian.
I do eat junk food sometimes, although I try to minimize it. Chocolate can be hard for me to avoid, and I like tortilla chips and salsa. Sometimes with friends I have cheese or pineapple pizza.
I take a multivitamin each day, but I did that before I became vegetarian. My mom insists that it's good for everyone. I also take a calcium supplement because my gynecologist recommends that all women take one.
I also grow my own lettuce and some herbs. I would grow more vegetables if I had room (I live in an apartment). I think fresh veggies taste better and this way I can just walk out on my porch and pick my own. Fresh herbs can be expensive, so I'd rather grow them myself. I have basil, oregano, lavender, spearmint, and rosemary.
